Most of you would have heard me mention my gorgeous friend Jennifer in previous posts. For those of you who haven’t, Jennifer is one of my very precious friend’s, it doesn’t matter how long we go between face to face visits it always feels like yesterday that we had one, well almost all the texting we do in between definitely helps (Jennifer has 3 kidlets too), what are phones for?

Now did you also know Jennifer’s a friend that loves to bake as much, sometimes even more than me, and such delicious food at that. I’ve got a small collection of her delicious recipes starring on the blog:

As you can see this gorgeous lady is a wealth of deliciousness as well as being one of my most treasured friends, if we had the time I’d love to start a Vlog with her, we’d have some fun that’s for sure, and we’d talk a LOT!

Today I am extremely grateful to be sharing yet another one of Jennifer’s delicious treasures with you all. Jennifer and her 3 kidlets came for a playdate during the school holidays (treasured face-to-face time), I’ll add she never EVER comes empty handed, even if I tell her NOT to bring anything she still brings something absolutely delicious and on this particular day she bought a collection of delicious treasures but it was her Vegetable and  Feta Tart that really stood out, lunch was deeeeelicious to say the least, (the kidlets got homemade pizza’s), everyone was happy except the poor Dad’s who were busy working 🙁

This Vegetable and Feta Tart is perfect, whether you’re vegetarian or not I guarantee you’ll love it, there are so many great flavours packed in there, it’s vegetable goodness at its finest!

Vegetable & Feta Tart

Serves: 4
Ingredients
  • 150g Pumpkin, sliced thin
  • 1 x Roma tomato sliced (approx. 50g)
  • 2 mushrooms (approx 80g) sliced
  • 1 washed potato (approx. 100g), sliced thin
  • ½ red capsicum, sliced into strips
  • 1 large zucchini, sliced lengthways
  • 1 garlic clove diced
  • ½ red onion, sliced
  • Baby spinach leaves (a good handful)
  • 2 sheets puff pastry
  • 2 tablespoons Pizza sauce
  • 80g feta, (I used Danish)
  • ½ cup tasty cheese, grated
  • ¼ cup parmesan cheese, grated
  • Smoked Paprika to garnish
Instructions
  1. Preheat oven to 170 C (fan forced)
  2. Arrange vegetables (except for spinach leaves and garlic) on tray lined with baking paper, spray with olive oil, season with salt and pepper and bake for 10 mins. Remove tray from oven, turn vegetables, return to oven and bake a further 10 minutes or until vegetables are just roasted.
  3. Reduce oven temp to 150C (fan forced)
  4. Grease a rectangular tart tin 35cm x 12 cm x 2cm, line with puff pastry and trim edges. (I overlapped my 2 pieces of pastry in the centre, just press down gently to seal them). Note: don’t go out and buy this size tin especially, just use what ever you have in the cupboard, you may just need to reduce/ increase cooking times and temps.
  5. Spread pizza sauce all over pastry then layer vegetables on top, I started with pumpkin followed by potato, spinach leaves, diced garlic, capsicum, zucchini, tomato, onion and mushrooms.
  6. Crumble feta over the top, sprinkle with tasty cheese followed by the parmesan.
  7. Place tart in oven and bake for approx. 40 mins or until pastry edges are crispy and cheese is nice and golden.
  8. Garnish with a little sprinkle of paprika before serving.
  9. Slice and enjoy!

 

This tart teams perfectly with freshly made salad/s. The day Jennifer bought it to my place I made a Cherry Tomato, Cucumber and Green Bean Salad  as well as an Easy throw together Roast Pumpkin, Rocket and Feta Salad using Praise Creamy Garlic Dressing.  However if you are looking for a salad that’s a little more fancy pants, you need to check out this Roast Pumpkin Rocket Salad it’s one of my all time favourites.

  3. This tart is the way to my vegetarian heart for sure! I love all the different vegetables packed in their, and the salty feta crumble on top – swoon. I can’t wait to give this a try soon – I’ve even got some gluten free pastry waiting in the freezer 🙂 What an awesome and delicious friendship you two have!
