Some weeks the whole meal planning notion goes right out the window, as much as my life and brain function so much better when I plan and organise, some weeks the wheels fall off.
Last week was one of those weeks, where if it didn’t rain busy it poured busy…….birthday celebrations, parent teacher interviews, scout adventures, extra work commitments, Father’s day celebrations, not that I’m complaining I just wish things could space themselves out sometimes (in a perfect world Dannielle!).
One of my sweet thoughtful friends said to me ‘I know sometimes it’s hard to see how the week will work, but just take it day by day, hopefully it will be over before you know it’. And what do you know here I am tonight writing about it and we somehow made it out the other side.
The good news is I’m starting to get some routine back (well sort of, I still have 3 loads of unfolded clean washing on my bedroom floor).
Last week was definitely a ‘wheels falling off’ kind of week in the meal planning and washing maintenance department.
Friday night I managed a quick grab (non-planned) grocery shop, Sunday for Father’s Day I made sure Zadada got one of his favourite home cooked meals (lamb cutlets, gravy and veggies, he’s not hard to please) but didn’t get to do any major meal planning for the coming week, this week (my brain just didn’t have the space) so it’s kind of been a make-the-most-of-what’s-already-at-home kind of week.
I thought you might like to know what I made for dinner last night (Tuesday night). Tuesday was a home day (I love home days!) around lunchtime I started thinking about what I should make for dinner, so did a quick scout between the pantry and fridge and come up with …….Carrot, Lentil and Salmon Patties served with a side of my Easy Fried Rice and some steamed green beans.
I haven’t made a batch of salmon patties in ages in fact I think the last time was a post I did almost 2 years ago ( I did say ages). Looking at that 2-year-old post I figured a bit of a revamp was in order.
These Carrot, Lentil and Salmon Patties are perfect for a make-the-most-of-what’s-already-at-home kind of meal. Keep a big tin or 2 of salmon and lentils in the pantry as staples, some veggies in the fridge or freezer and you’ll have a quick and easy go to healthy balanced family meal. For the record my fried rice had a few substitutions (you may notice the broccoli) I didn’t hear any complaints though and I avoided having to make a special trip to the supermarket.
Here’s Your How-To:
- 415g tin pink salmon drained & flaked
- 400g tin lentils drained
- 1 medium carrot grated
- egg lightly whisked
- 1 tablespoon soy sauce
- 1 clove crushed garlic
- 1 tablespoon parsley, chopped
- 1 cup of plain flour to roll patties in.
- 2- 3 table spoons rice bran oil for frying
- Combine all ingredients except flour in a bowl.
- Using wet hands mould together ½ cup portions of salmon mixture to form a patty. Flour both sides of patty.
- Lightly oil a non-stick frying pan and heat to medium temperature. Cook patties 3-4 minutes each side or until golden. Remove from pan and place on absorbent towel until ready to serve.
- Enjoy with your favourite serve of salads or steamed veggies and fried rice.
- The patties make a great sandwich/burger filler too.
