Slow Cooker Chicken Noodle Soup Feature

Now I don’t want you to faint or go having any sugar withdrawals on me but this weeks post is a savoury number……. it’s ok, we’re all ok, yes every now and then we all need to break the sweetolicious cycle and savourise things up a bit, so today I’m souperising!

Last winter I discovered a recipe for a Slow Cooker Chicken Noodle Soup in one of my Super Food Idea’s magazines and since then I’ve been adapting it to my family’s taste buds as well as making the creation process as fancy pants free as possible. The original recipe used a whole chicken and you had to fuss around separating meat and bones, who has time for that?…… not me, I’d rather put that extra effort into a yummy dessert .

Every time I make this little treasure it gets gobbled up by all ‘5‘ family members (yes you read that correctly) , it’s classified a winner, winner chicken dinner if Miss 4 even attempts it!

I’m pretty sure I’ve confessed before that I’m a little addicted to my Slow Cooker especially at this time of year. I love how you can throw everything in the one pot, put the lid on, turn it on and pretty much ignore it while it cooks away giving you extra time to get all those OTHER jobs or work done. Then after all that hard work you return to a yummy dinner the whole family can enjoy.

We eat this Slow Cooker Chicken Noodle Soup as a main meal, it covers all the food groups required for a good healthy hearty meal, if you’re on a super dooper health kick you may want to pull back on the parmesan cheese and sour dough but personally I think you need the lot including the yummy egg swirls on top for a bit of extra texture and yumminess.

Don’t you just love how soup warms you from the inside out. If you know someone feeling a little under the weather at the moment why not double the quantities below and surprise them with this yummy wholesome soup, it’s sure to brighten their day.

Ingredients
  • 1kg chicken thigh fillets, browned off in frying pan.
  • 3 large carrots, thickly sliced
  • 3 celery stalks, thickly sliced
  • 400g tin crushed tomatoes
  • 1 leek halved and sliced (I've used a brown onion before too)
  • 2 litres water (tap is fine)
  • 2 tablespoons chicken stock powder
  • 1 tablespoon all purpose seasoning
  • 1 dried bay leaf
  • 2 sprigs fresh flat-leafed parsley, separated into stalks and leaves
  • 1 cup small dried pasta shells
  • 2 eggs
  • 1 teaspoon olive oil
  • Grated parmesan and sour dough to serve
Instructions
  1. Place chicken, carrot, celery, tomatoes, leek, water, stock powder, all purpose seasoning, bay leaf and parsley stalks into slow cooker. cover with lid.
  2. Cook on low for 6 hours.
  3. Using tongs carefully remove chicken fillets from slow cooker and place on a large plate.
  4. Using a slotted spoon remove carrot and set aside with chicken. Discard all other vegetables.
  5. Add pasta shells to remaining broth, cover with lid and cook on high for a further 15 minutes or until just tender.
  6. While pasta is cooking shred up chicken thigh fillets. When pasta is tender stir shredded chicken and carrot back through broth. Season with salt and pepper.
  7. Chop reserved parsley leaves. Whisk eggs and parsley together in a bowl or jug. Heat oil in a large frying pan/wok over medium-high heat. Pour egg mixture into pan. Swirl to cover the base as pictured above. Cook 2 minutes or until firm, roll egg disc up to form a long roll. Remove from pan and slice into 1cm thick slices.
  8. Serve soup into bowls, sprinkle with sliced egg and parmesan cheese and don't forget that sour dough on the side.
  9. For an extra bit of heat garnish with some dried chilli flakes.
  10. You can freeze this soup, quite often I make a double batch.
  11. If you are making this soup ahead of time (as in freezing or fridging), don't add the pasta, it will go sloppy. Instead cook it separately and add to reheated soup just before serving.
