This Salted Caramel, Chocolate Chip Crumble Slice idea evolved from the extra tub of Coles Salted Caramel Sauce I had left over from Dad’s 60th Birthday cake  (I filled the centre of his cake with this sauce and mini m&m’s ), one tub was more than plenty, der I bought 2! This sauce is sooooooo good!

Coles Salted Caramel Sauce

It’s so versatile as in you can just spoon it straight from the container into your mouth 😉 or if you have some will power you can incorporate it into baking such as this slice of mine.

This Salted Caramel, Chocolate Chip Crumble Slice is an adaption of my Nutella Crumble Slice and boy oh boy you won’t be disappointed it’s so yummy and really easy to make.

Serves: 16
Ingredients
  • 1¾ cups plain flour, sifted
  • ½ teaspoon baking soda, sifted
  • ½ cup brown sugar, packed
  • ¼ cup white sugar
  • 125g butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 300ml Coles Salted Caramel Sauce (it's in the fridge section with cream)
  • ¾ cup dark chocolate chips
  • 1-2 tablespoons icing sugar for dusting
Instructions
  1. Preheat oven to 160 C (fan forced)
  2. Line a square 21cm x 21cm baking dish/pan.
  3. Combine all dry ingredients in a large mixing bowl.
  4. Stir through wet ingredients (butter, egg & vanilla) until well combined.
  5. Press half mixture into base of prepared pan.
  6. Spread salted caramel sauce evenly over slice mixture then scatter chocolate chips over the top.
  7. Crumble remaining slice mixture evenly over the top and place in the oven to cook for 25-30 minutes or until just firm and lightly golden
  8. Let cool in pan.
  9. Slice into squares then dust with icing sugar.
  10. Enjoy!

Our Butcher sells Chicken thigh fillets marinated in a salted caramel, I bake them up in the oven and serve them over a stir fry of vermicelli noodles and vegetables, so yummy!
