The last week has been huge here at Zamamabakes HQ, mainly due to the fact that I was away for 3 whole nights from last Thursday, all by myself! Yes you read that right, for those who follow my social media pages you will be in the know that I attended the Problogger  blogging conference. It was fantastic, the sessions, the food (OMG I swear I must have almost eaten my body weight in food), all the beautiful bloggers  I finally got to meet in person and the beautiful bloggers I got to catch up with again in person.

Did I mention the FOOD!!! This wasn’t even a quarter of it!!

Special thanks going out to one Zadada for playing the role of Mr Mum while I was away, he did an amazing job (even ironed all the school uniforms before I got home Sunday) I really am so very grateful for this amazing man I married 11 years ago, I don’t know what I’d do without him. Anyway enough of my sop sop lovey dove talk, I think you get where I’m coming from (it was a super dooper treat to get away with peace of mind everything was ok at home).

Speaking of food……..a little while ago (like a few months ago) Miss 4 and I baked some Rice Bubble Biscuits and finally I’ve got around to sharing them with you all.

There really isn’t anything fancy to these little treasures, just lots of yummy eating!

I used the basic base of this recipe on the back of our Rice Bubble box and adapted it to suit the time and ingredients I had available on this particular day, I love that about biscuit recipes you can generally mix and match them to suit what’s in your pantry.

Miss 4 had a lovely time in the kitchen with me and I can tell you those biscuits vanished within days, they were delicious and really easy to make.

Serves: 40
Ingredients
  • ½ cup butter softened
  • 1 cup caster sugar
  • 1 egg, beaten lightly
  • 2 teaspoons vanilla extract
  • 1¼ cups self raising flour
  • 2 cups Rice Bubbles
  • ½ cup milk chocolate bits
  • ½ cup dark chocolate bits
  • ½ cup white chocolate bits
Instructions
  1. Preheat oven to 170C (fan forced)
  2. Line 2-3 oven trays with baking paper.
  3. Beat butter and sugar with an electric mixer until pale and creamy.
  4. Gradually add egg and vanilla beating well to combine.
  5. Add sifted flour, stir with a wooden spoon.
  6. Add Rice Bubbles and choc bits, stir to combine (alternatively if your electric mixer is strong enough mix on low speed to combine mixture).
  7. Spoon tablespoons of mixture onto prepared oven trays.
  8. Bake in oven approx 12 minutes or until lightly browned. Stand 5 minutes on trays and transfer to wire racks to completely cool.
  9. Enjoy!!
