Pecan Sticky Date Cake

Last week Miss 4’s preschool was having a bit of a spring clean, part of that spring clean included getting rid of some old gossip magazines. One of the lovely preschool teachers welcomed me to take what ever I wanted from the throw away pile. Those magazines were treasure right before my eyes, even with the likes of Pinterest and other social media pages I do love flicking through a good old gossip mag in search of some yummy recipe inspiration, reminds me of the times I used to do the same with my beautiful late Nanna’s magazines xxxx.

The next day was a home day, so once we got the essential house jobs done Miss 4 and I settled down on the lounge together to have a flick through the magazines. We found lots of inspiration both savoury and sweet but of course we decided we felt like something sweet and I knew Zadada wouldn’t protest to a sweet treat after dinner that night.

I had a recipe for Sticky Date Pudding sitting front and centre in my lap but I wanted something a little more simple and fuss free, I was thinking more along the lines of cake, one that would give the same flavours as a sticky date pudding plus a little bit of crunch (cue the addition of the pecan nuts!). I love a cake that’s moist and flavoursome with a little bit of crunch……. two of my personal favs include this Best Ever Homemade Carrot Cake and this Lemon Crumble Cake, so much deliciousness in every mouthful!

My little assistant and I set to work, and the outcome was deeeeelicious!

Afternoon tea was quite the treat, a dusting of icing sugar, a dollop of cream and a nice warm cup of tea made the perfect finishing touches!

After sampling a slice (ok I’ll be honest I sampled 3 slices, but over 3 days, it’s all about a good balance, right?!) I’ll be adding Pecan Sticky Date Cake to my personal favs list!

Pecan Sticky Date Cake

Serves: 9
Ingredients
  • 1 cup chopped, pitted dried dates
  • 1 cup water
  • ½ teaspoon bicarbonate soda
  • 125g butter at room temperature, cubed
  • ½ cup brown sugar, firmly packed
  • 1 egg
  • ¾ cup self-raising flour, sifted
  • 1 cup chopped pecan nuts measured out into 2x ½ cups
Instructions
  1. Line a 21cm x 21cm cake tin with baking paper, leave about a 2cm over hang for easy removal later.
  2. Preheat oven to 160C fan forced.
  3. Place dates and water in a small saucepan, bring to the boil over medium heat.
  4. remove from heat, stir in bicarb soda. Cool slightly and process date mixture with stick blender or similar (electric beaters should work too) to form a smooth paste, set aside.
  5. Beat butter and sugar in a bowl of an electric mixer until creamy. Beat in egg until combined.
  6. Stir in sifted flour followed by date mixture and ½ cup chopped pecans until well combined.
  7. Pour into prepared cake tin.
  8. Sprinkle remaining ½ cup of pecans over the top of cake.
  9. Bake for 30-35 minutes or until a skewer, knife inserted in centre of cake comes out clean.
  10. Stand 5 minutes before lifting out of pan. If you want cake to completely cool sit cake on a wire rack.
  11. Cake is delicious served warm or at room temperature.
  12. Cut into slices and serve as is, with a yummy dollop of cream or ice cream.
  13. For some extra prettiness I dusted my cake with a little icing sugar.
  14. Store any excess cake in an airtight container for 3-4 days.
  15. Enjoy!

A cake making session wouldn’t be complete without a little lick of the bowl!

When I was little Mum would let my brother and I have a beater each to lick after all the mixing was done but she’d tap off as much excess mixture as she could before handing them over (I thought she was a party pooper)……..I now do the same here, I get it now! (that bowl in Miss 4’s hand had a good scraping out before she got hold of it), I think she lapped up every minute of having it all to herself as when the big kidlets arrived home from school she proudly announced to them that she’d ‘licked the bowl’. There was a little bit of envy in the room 😉

  4. You had me with the stick date. MAN! I can’t believe I ever thought Aussie sticky date pudding would be gross and now it’s one of my favourite desserts ever.
