Wholemeal Zucchini, Choc Chip & Chia Muffins

Wholemeal Zucchini, Choc Chip & Chia Muffins

The lunchbox treasures continue this week as I’m still on a bit of a roll making sweet something’s for the kidlets lunches, so far the tiny teddies are still contained in their packets in my pantry (desperate measures haven’t struck, YET!)

With Zucchini having such a subtle flavour I thought they would be the perfect vegetable to disguise in these muffins taking them to a slightly healthier version of a sweet something.

Being chocolaty (great camouflage) I used wholemeal flour too (another healthy tick!), our Miss 4 needs all the fibre she can get at the moment, let’s just say there’s been

No Bake Apricot, Date & Coconut Slice

Apricot date and coconut slice feature

Can you believe it’s already week 2 of term 3?! You know Christmas is going to be here before we know it!!! (sorry if I’m scaring anyone).

I don’t know about you guys but the weekend that just passed feels like I blinked Friday afternoon and on the other side of that blink was Monday along with another school week and another round of kidlet lunch box packing ready and waiting to go again!

Lunch box packing has played a part in my life for over 9 years now, I’m always on the hunt of ways to make them a little bit more exciting in the homemade sweet treat department whenever I can, I do confess it’s not something I am able to do all the time, sometimes a packet of tiny teddies, a packaged muesli bar or a squeezie yoghurt has to cut it.

Recently I did a little bit of experimenting with a No Bake Apricot, Date and Coconut Slice, I sent it along in the lunch boxes and the result………. I had the 3 kidlets along with one Zadada coming home that afternoon asking me to make sure they had another slice of it packed for the following day, definitely a winner!

And you all know

Fabulous Foodie Fridays #60

FFF #60

Happy Fabulous Foodie Fridays lovelies!

Sadly this is the last week I will be saying those words to you. I have decided to hand in my FFF co-hosting reins 🙁

WHY???? My little family is my number 1 priority (as I know would be the case for all of you guys too), lately blogging has been taking me away from them a little more than I would like. A few months ago when Zadada hurt his back the lovely Sammie from The Annoyed Thyroid shared some wise words with me, she said

Spiced Pumpkin Chia Muffins

Pumpkin & Chia Muffins

These yummy Spiced Pumpkin Chia Muffins are just perfect for lunch boxes big and small!

Miss 7 and I got our bake on in the kitchen over the weekend while the boys were at the Movies and Miss 4 was taking her nap.

Having both big and little people in the household we went with 2 size options.  The combination of Pumpkin, Wholemeal flour, Chia Seeds & Spices certainly makes for a memorable delicious mouthful if you go mini and if you go the standard size option they’ll fill that empty tummy feeling between meals.

I couldn’t help myself but to

3 Ingredient Salted Caramel Fudge

3 ingredient salted caramel tim tam fudge feature

Hope the school holidays are treating everyone kindly, kidlets or no kidlets 😉

The first half of last week was quite a rainy one here for us in Northern NSW, not a great way to start the holidays but we weren’t about to let that fact get in the way of some school holiday fun.

What better time is there to get creating in the kitchen than when you have 3 kidlets home on school holidays and its wet and cold outside?!

Cue one 3 Ingredient Salted Caramel Tim Tam Fudge, it’s a mouthful to say but such a delicious one to consume 😉

I’m going to back track a little here…….The Last week of term 2 our Mr 10 had his end of term Scout party and that always comes with a take-a-plate-request which I have no problems with what so ever, you guys know I love any excuse to get baking and creating in the kitchen except for when

Fabulous Foodie Friday Feature 58

Welcome to our first July 2015 edition of Fabulous Foodie Fridays!

Can you believe we’ve hit the second half of the year already? I know one Zadada can……. being an accountant the last few weeks have been crazier than usual for him. Fingers crossed things start to settle down a little now and his 8pm finishes disappear for a while 😉

Week 1 of our School holidays is flying along, I thought I’d share a bit of what’s been happening…..

We kicked things off last weekend with a family date night at the Movies, we watched Inside Out and it was thoroughly enjoyed by all 5 family members, the bonus being not one toilet break was requested!

school holiday fun 6

We managed a playdate at home with some very special interstate friends of ours, unfortunately the weather was quite damp but the 8 kidlets didn’t let it bother them, they played so lovely together. No pictures were taken as we were too busy having fun!

The Sun finally started to creep out from behind those rainy clouds mid week and we got to venture outside. Everyone loves a trampoline don’t they? This was my entertainment while hanging out the clothes .

School holiday fun

Our guinea pigs are lapping up this school holiday business!

School holiday fun 1

And life wouldn’t be complete without a little kitchen adventure (you’ll see what we made next week!)

school holiday fun 4

Instead of bedtime stories we’ve been having some paper -folding fun. I remembered how to make a paper crane from my year 8 Japanese lessons the kidlets were most impressed. Mr 10 then decided the following night that he’d run a paper plane making lesson to which all 5 family members took part, we followed it up with a race but again no pictures taken (we soaked up every moment instead).

In between all the fun and meltdowns (yes we have those too) I’ve been narrowing down last weeks linked up deliciousness to bring you my Fabulous Foodie Five……

Slow Cooker Chicken Noodle Soup

Slow Cooker Chicken Noodle Soup Feature

Now I don’t want you to faint or go having any sugar withdrawals on me but this weeks post is a savoury number……. it’s ok, we’re all ok, yes every now and then we all need to break the sweetolicious cycle and savourise things up a bit, so today I’m souperising!

Last winter I discovered a recipe for a Slow Cooker Chicken Noodle Soup in one of my Super Food Idea’s magazines and since then I’ve been adapting it to my family’s taste buds as well as making the creation process as fancy pants free as possible. The original recipe used a whole chicken and you had to fuss around separating meat and bones, who has time for that?…… not me, I’d rather put that extra effort into a yummy dessert .

Every time I make this little treasure it gets gobbled up by all ‘5‘ family members (yes you read that correctly) , it’s classified a winner, winner chicken dinner if Miss 4 even attempts it!

I’m pretty sure I’ve confessed before that I’m a
