Orange Chocolate chip & Chia Muffins

The weekend just passed was a huge one for us, I feel like we were only home to sleep, eat breakfast and of course squeeze in those essential loads of washing (school uniforms) and ironing, it was crazy but as I said in my earlier Cake 2 The Rescue Review this week it was crazy GOOD!

Needless to say I didn’t get one single moment to have myself a little baking session to make some homemade treats for the lunch boxes. I confess…….Monday and Tuesday saw a packet of tiny teddies housed in Mr 10 and Miss 8’s lunch boxes, I’d been having such a good run too! Thankfully though on Tuesday I managed to whip up a batch of my No Bake Apricot, Date & Coconut Slice and have a little experiment (which turned out very successful) with some Orange, Chocolate Chip and Chia Muffins. The lunch boxes are looking more exciting again, hooray!

When I shared the picture below to my Facebook and Instagram pages, posing the question ‘should I plant them on the blog?’, you lovely people responded with a loud and clear YES!

So here you go and a proud little shout out…….the oranges I used were home grown here at Zamamabakes HQ, Miss 4 and I picked them fresh from the tree and within 10 minutes of picking them their juice was sweetly baking away to help create these delicious little morsels.

I love baking muffins, they’re quick, tasty, freezable and especially delicious warm from the oven, they go pretty good reheated in the microwave served with a scoop of ice cream too (did I just say that last one out loud?……….of course I did, it’s Zadada’s personal fav!)

There was also the essential leave-the-teabag-in taste testing session, I promise I only ate 2 and all in the name of blogging (such a handy excuse)!!!

Orange, Chocolate Chip & Chia Muffins

Serves: 24
Ingredients
  • 2¼ cups self raising flour, sifted
  • 1 cup caster sugar
  • ¾ cup coconut
  • 1½ tablespoons chia seeds
  • 1 cup Dark Chocolate Chips
  • 2 teaspoons finely grated orange rind
  • 190g butter, melted
  • 3 eggs lightly beaten
  • ¾ cup milk
  • ¾ cup orange juice
Instructions
  1. Preheat oven to 170C (fan forced)
  2. Line 2 x 12 Muffin tins with patty pans (1/3 cup capacity)
  3. Combine SR flour, sugar, coconut, chia seeds, chocolate chips, rind, butter, eggs, milk and juice in a large bowl.
  4. Mix with a wooden spoon until just combined.
  5. Spoon mixture evenly between 24 pans (1 heaped tablespoon of mixture per patty pan should get you on your way).
  6. Bake for 20 minutes or until lightly golden and muffins spring back to touch.
  7. Cool in pans 5 minutes before turning out onto a wire rack to cool completely (if you're like me you'll burn your fingers eating 1 or 2 while they're hot! So good.

      I know, well they’re healthy for me ???? still have sugar!!! But less than I usually create with. If I get time I will make a batch for us lovely. I say bring on next week!! Can’t wait to see you x

  3. Chia is almost a superfood, that makes the muffins almost healthy which means we can eat almost all of them! De-fricking-licious!

    I made these today and they are fabulous! I didn’t have any orange zest so I used lemon instead and replaced the flour with GF flour and they are still yummy 😋. Thanks for this recipe – I hope my little one loves them as much as I do!!! (Ps I couldn’t select the rating option but would give this one 5 stars!!)
