No Bake Clinkers Hedgehog Slice

You all know how much my little family and I love a hedgehog slice around here so I don’t think you’ll be surprised to see that my hedgehog slice journey continues with this No Bake Clinkers Hedgehog Slice.

If you’ve been on board for a while you will know about my Traditional Chocolate Hedgehog Slice and my No Bake Tim Tam Hedgehog Slice (which for the record is super dooper popular this week!), oh I do love hedgehog slices!

The beauty of a hedgehog slice is how quick and easy they are to put together……butter, cocoa, sugar, an egg, plain biscuits, coconut and some melted chocolate on top……my kind of slice especially when you want something yummy to feed a crowd. Then of course you can up the ante by adding a mix-in like Tim Tam’s or CLINKERS!!!! (I promise you won’t regret the mix-in!)

How does eating this little treasure an hour after starting to make it sound? Pretty good?? Unless of course you’re like me…….making your cake and eating it too as you go, (guilty much?!!!). Which ever way you choose to eat it (I highly recommend both) you will be guaranteed of satisfying the best of your chocolate cravings!

Melting your chocolate for the topping can be done traditionally (double boiler, stovetop) or in the microwave, I prefer the microwave, it’s much quicker and simpler (just make sure you have a good quality microwave safe jug or bowl, I love my Tupperware Mix N Wave Jug it makes melting chocolate, making sauces and measuring so easy). The secret to getting your chocolate to stay crack free when you go to slice it is adding in a little coconut oil or copha while melting your chocolate, this step makes a huge difference, instructions are below.

While I was making this slice last weekend I had two little poppets hovering around the entire hour before I sliced it, not only did they have to wait for it to be ready but when you have a mum as a food blogger you also have to wait for those annoying, ‘are you done yet Mum?’ photo’s to be taken. They really were very patient, their treat was well deserved, (butter wouldn’t melt, hehehe!)

Mr 10 made sure he didn’t miss out either, quickly requesting a slice when he arrived back from catching yabbies in our creek.

Ingredients
  • 200g butter, cubed
  • ½ cup caster sugar
  • 4 tablespoons cocoa
  • 2 Tablespoons desiccated coconut
  • 1 egg, lightly beaten
  • 250g packet plain biscuits crushed (I used Marie biscuits)
  • 160g packet Cadbury Clinkers (I cut each clinker into 4 pieces)
  • TOPPING
  • 200 milk chocolate
  • 1 tablespoon Coconut oil or copha (this stops the chocolate cracking when you cut up the slice)
Instructions
  1. Line a 21cm x 21cm square cake pan or oven dish with baking paper.
  2. In a saucepan melt butter, sugar and cocoa over a medium heat for about 3 minutes or until sugar dissolves.
  3. Remove from heat, add coconut, egg, and biscuits and clinkers, (when adding the egg just be sure to keep that mixture moving with a wooden spoon so it distributes evenly).
  4. Press mixture into prepared pan/dish.
  5. Chill for 30 mins.
  6. CHOCOLATE TOPPING
  7. Place chocolate and coconut oil in microwave safe container and heat for 30 second intervals (in my microwave that's about 3-4 rounds) stirring in between until mixture is all melted and smooth. (alternatively you can melt it using stove top double boiler method)
  8. Allow to set in fridge for at least 30 minutes before slicing.
  9. Slice with a hot knife into squares.
  10. Enjoy!

    Please please remove this recipe from your site…it is so yummy, scrumptious…I CAN NOT STOP EATING IT!!!
    No seriously I love clinkers and hedgehog slice to be honest and have never really mastered making a good slice. So I was keen to try this and was a little bit worried about the raw egg and no cooking- but after that first bite… I was addicted! thanks!!!
