I’m back, school holidays and all!

Wasn’t sure whether I’d be able to get a second recipe out to you guys this week but thanks to a homeday, the 2 older kidlets standing in as extra kitchen hands and one Miss 4 co-operating and having her day nap I was able to get this little treasure made, edited and written up ready for you all to get creating with.

Last week Miss 8 bought home an Ice Cream recipe her gorgeous, thoughtful teacher photo copied for her from a book at school (just don’t ask me what book?!). I got handed the photo copy and the request was made ‘Mum can we make this while we’re on school holidays?’ And you guys know me, never one to decline any opportunity to create in the kitchen (especially something “sweet”), ‘sounds like a great plan to me’ I replied……..and so operation Homemade Choc Chip and Berry Swirl Ice Cream began to hatch, no plain vanilla ice cream in this neck of the woods!

We had everything we needed right here at home, conveniently I had exactly 1 cup of cream leftover from last weeks 15 Minute Rocky Road Cheesecake and I always try to have some topping in the fridge (you just never know when you might need it), Triple Chocolate Mug Cake, Rocky Road Cheesecake and Cadbury Dessert Parcels I’m talking to you!

After a morning play in the backyard, a break for lunch,

two pairs of kitchen hands at the ready and one Miss 4 down for a nap, operation ‘not plain’ vanilla Ice Cream began!

I got the kidlets grating some chocolate first and so as not to grate those knuckles, each little bud of chocolate they grated their way down to found a comfortable spot in a certain 2 little mouths.

Everyone had a turn separating eggs (a highlight according to Miss 8, along with the taste testing), whipping, tipping and mixing.

If you’re looking for something fun to create with some extra helpful hands available this is a great little recipe to do it with.

I will add there is no fancy pant churning required for this ice cream, just mixing, freezing and a little patience.

Homemade Choc Chip and Berry Swirl Ice Cream

Serves: 2 adult
Ingredients
  • 2 Eggs
  • ½ cup caster sugar
  • 1 cup thickened cream
  • ½ cup grated chocolate (we used milk and dark)
  • 1 teaspoon vanilla
  • 2 tablespoons mixed berry topping (we used Coles brand)
  • Optional extra: Frozen raspberries to sprinkle on top.
Instructions
  1. Separate eggs.
  2. Beat egg whites until stiff and peaking.
  3. Add the sugar gradually, beating all the time.
  4. Mix in the egg yolks.
  5. Beat the cream in a separate bowl until it is thick.
  6. Stir the cream into the egg and sugar mixture, gently mix in the grated chocolate.
  7. Pour the mixture into a plastic container or bowl and cover with lid or foil (ours was a 700ml plastic bowl).
  8. Place into the freezer.
  9. hours later take container from freezer and rough mixture up with a fork, with a spoon make little holes all through the mixture and drizzle the berry topping in (we used a snap lock bag and snipped the end off). Smooth off with a spoon drizzle a little more topping over the top, cover and return to freezer. Freeze for at least another 2 hours, overnight is even better!
  10. Scoop the ice cream into a bowl or cone, for an extra treat top with your favourite frozen or fresh berries.
  11. Enjoy!

I’m thinking this little treasure of a recipe is the beginning of some very fun and creative kitchen kidlet adventures for the warmer months ahead!

      We have been Amy. Loving no uniform ironing no strict lunch box packing, enjoying the odd treat and some priceless quality family time.

  3. Yum! No churning but all the delicious! Chocolate and berry is always a winning combination, isn’t it? Look at your little sous chefs, Channel 10 will have to invent a new series Family Masterchef just for the Zafamily! xx

  5. Yum, this looks fantastic, and I love that it isn’t an ice cream machine recipe! I used to have one but just found it so complex to make anything in it that I gave up. This has inspired me again :)
