Easy Vegetable Nachos feature

For a while now I’ve had it in my mind that I wanted to share Zadada’s famous (well in this house at least) recipe for Easy Vegetable Nachos. They are so yummy, easy to put together, packed full of veggies, 80% of our little family love them, Miss 4 gives them a go and Zadada cooks them (what more could a Mum/Wife wish for?)

When Mission Foods recently invited me to review some of their edible treasures I knew the time had come to introduce Zadada’s Nachos to the blog!

My sights were firmly set on the Red Quinoa and Chia Wraps, I knew we could turn them into the chip component (easy peasy bake them off in the oven) making Zadada’s Easy Vegetable Nachos even healthier, all I had to do was convince Zadada to star as head chef, the nachos always taste so much better when he makes them (I love it when he has time to cook for our little family), he obliged and I took on the role of Red Quinoa and Chia Wrap chip creator (maybe taste tester too).

The wraps come 8 to a packet, because we wanted to try both varieties I used 4 from each. The leftovers got put to good use for the kidlets afternoon tea the next day, homemade chips and hummus dip to be exact! Term 4 I can see a good healthy lunchbox snack coming your way, no artificial colours or flavours, an extra source of fibre and lots of yum!

Now I did mention making the Easy Vegetable Nachos even healthier, need I say much more than Chia seeds and Red Quinoa, we’re talking good things like omega-3 fats, calcium, dietary fibre, protein and nice amino acids between the 2 varieties. Not to mention the fact that when I checked the fat content of the regular plain corn chips we usually use I was pleasantly surprised to see that the wraps have a good 50% less fat again, winning!

We baked the wraps (cut into triangles) up and I found it very difficult to stop eating them (I did mention taste tester), they taste really good, so good the kidlets couldn’t keep their hands off them prior to baking, including Miss 4!

Zadada’s Nachos are so easy to throw together and now by serving them with the Red Quinoa and Chia Chips have the extra benefits of being healthier and tastier!

Whether you make them for lunch or dinner you’re going to love these Nachos, they’ve become quite the frequent flyer at our house and I’m loving every second of having Zadada cook them for us!

Easy Vegetable Nachos

Ingredients
  • 1 x 384g Packet Mission Red Quinoa or Chia Wraps, slice each wrap into 10 mini triangles
  • 5 cups chopped vegetables (mixture of cauliflower, broccoli, zucchini)
  • 1 x 453g Jar Mission Mild Chunky Salsa
  • 1 x 420g canned Red Kidney Beans, drained
  • 2 mushrooms finely sliced
  • 2 cups grated cheese
  • 1 cup guacamole (for us that means mashed avocado with a squeeze of lemon, salt and pepper combined)
  • ½ cup sour cream
  • Sweet chilli sauce
  • Optional extras chilli flakes and fresh lettuce leaves
Instructions
  1. Preheat oven to 180 C fan forced.
  2. Line 2 large oven trays with baking paper, place wrap triangles on trays and spray lightly with olive oil, season with salt and pepper.
  3. Bake in oven for 10 minutes, turning half way through (you want them to end up crispy like corn chips).
  4. Pan fry vegetables in a tablespoon of olive oil over high heat for 3-4 minutes, tossing frequently.
  5. Meanwhile combine kidney beans and salsa in a medium saucepan, over a low- medium heat, cook until just starting to simmer.
  6. Preheat grill to medium heat.
  7. Using oven proof dinner plates arrange crispy wrap triangles evenly over 4 plates.
  8. Place vegetables on crispy wrap triangles (again dividing evenly between the 4 plates).
  9. Top each plate with a serve of bean mixture ,I think you get the even portioning thing ;)
  10. Scatter half a mushroom over each prepared dish and follow with a ½ cup sprinkling of grated cheese.
  11. Place under preheated grill and cook for 3-4 minutes or until cheese has melted.
  12. Top with guacamole, sour cream and sweet chilli sauce.
  13. If you're looking for a little extra heat sprinkle some dried chilli flakes over the top of each individual serve, that way all family members can enjoy the nachos.
  14. If you're looking for a little extra greenery, sprinkle some mixed lettuce leaves over the top.
  15. Enjoy!
