Easy Chicken Salad feature

I know the warm weather has almost disappeared in these northern parts of NSW but this Easy Chicken Salad is one I feel you can eat all year round especially when you’re looking for a meal that’s deliciously, clean and healthy.

Zadada and I really need to have ourselves a few more salads like this one. Too often we get caught up eating carbie comfort food the kidlets like (and are guaranteed to eat), mainly due to the fact that it’s just quicker and easier to all have the same dinner. The kidlets aren’t the most adventurous eaters, however we do have one rule in our house regarding food and that’s just to try it even if it’s a mouthful, if you don’t like it you’re allowed to spit it in the bin, (I’ve found this the best way of at least getting the kidlets to try new things), and I think it eventually pays off! Our 10-year-old eats just about anything now and the girls are still at the at try it, mostly bin it stage, but we’re getting there!

The night I made this salad I made the kidlets a batch of my Chicken Bites with a side of garden salad and baked potato cubes, I wanted an easy night of everyone enjoying what was served up to them with no fuss!

I wasn’t sure how Zadada would react to this Easy Chicken Salad, sometimes when I make a dish that passes as a main meal in my eyes, in Zadada’s only passes as an Entrée. The good news he gave it a huge thumbs up and didn’t go looking for a main! Must have been the fact that this salad had a good serve of chicken as well as a good selection of fresh herbs (home-grown) and vegetables.

I love how refreshed you feel after eating a good healthy clean meal , I just need to stay consistent!

My inspiration for this salad came from a recipe I found in a gossip magazine at my hairdresser’s, one of my favourite things to do while sitting having my greys camouflaged!

Ingredients
  • 500g chicken breast fillets (if they're big breasts you may need to cut them down to about the size of your palm)
  • 3 medium mushrooms cut into quarters
  • 1 bunch of asparagus trimmed and cut into thirds
  • 12 cherry/grape tomatoes cut in half
  • 120g mix of rocket & spinach leaves
  • DRESSING
  • 1 teaspoon finely grated lemon rind
  • 2 tablespoons lemon juice
  • ½ cup of basil leaves
  • ½ cup Italian parsley leaves (the flat one)
  • 1 clove garlic crushed
  • ⅓ cup olive oil (extra virgin would be best)
  • salt and pepper
  • GARNISH
  • ⅓ cup flaked almonds ( for some extra crunch toast them)
Instructions
  1. Place chicken in a medium saucepan. Cover with cold water. Put pan over a low heat. Gently simmer for 10 minutes, turn heat off. Allow chicken to cool in water before slicing into 1cm thick pieces (I got distracted with kids and slightly over cooked our chicken but it was fine).
  2. Fry off mushrooms in ½ tablespoon butter until cooked, approx. 6 mins, set aside.
  3. Steam asparagus in microwave or on stove top for about 1-2 minutes if they are skinny you may only need the minute, Run under cold water to remove heat and set aside on a plate.
  4. In a food processor place lemon rind, juice, basil, parsley, garlic and olive oil in bowl and blitz, season to taste.
  5. Assemble salad by arranging rocket and spinach leaves on a platter, scatter asparagus over the top, follow with chicken and mushrooms and arrange tomatoes over the top.
  6. Spoon herb dressing over the salad and sprinkle with almonds.
  7. Serve onto plates and enjoy!

  3. There can never be enough chicken salad recipes, IMO. I alternate a tuna salad with a chicken salad most days for lunch. Happy with that every single time. I’ll add your recipe to my list. x

  4. That looks really good! I love salads with basil and coriander in them. They create such a fresh taste don’t they? I don’t use asparagus a lot so this has reminded me to seek it out more often.

  9. Looks very good fresh and healthy! You are so right. Same here. A lot of pastas and potatoes and pizzas to make the kids eat. My daughter is able to eat anything but the little one is difficult now! xx

  11. I can never say no to a delicious, easy chicken salad. Summer will be here soon, hopefully and your recipe will be perfect :) Since we have moved to US, we are trying to stay away from GMOs as much as we can…and sugar. This limits pretty much everything that is made outside my kitchen. Missing those good times back home :) Have a nice week!
