School holidays are upon us here at Zamamabakes HQ as I’m sure they are for a good bunch of you lovelies too.

Having the 3 kidlets home on my ‘blogging’ work day means getting to straight to the point a little quicker, my time is more theirs at the moment.

I thought I’d share one of the family dinners “we’ve” (Miss 4 has a go) been enjoying of late…..Easy Beef and Vegetable Noodles.

Here’s a sneak peek at what dinner looks like most weeknights before Zadada arrives home from work.

That cheeky little 4-year-old Monkey at the front takes a good hour to eat her meal if I don’t assist (even with the broccoli removed), that’s why I still assist! I should mention if it was chicken nuggets and chips on her plate it would be inhaled (that’s the only exception and very much a sometimes/Mummy needs her sanity kind of meal!).

What I love most about this Beef and Vegetable Noodle dish is how easy it is to throw together, it’s budget friendly (mince is good like that), and you get to give your family a good serve of healthy wholesome food groups, even if you have to assist one of them.

If you’re a Mumma or a Dada being a little carb conscious just drop the hokkien noodles for you and add them for the kidlets 😉 If you like some extra heat sprinkle a few dried chilli flakes over your individual serve.

I chop everything small for the fusspots kidlets, if you don’t own fusspots (lucky you) just slice and break up everything to standard stir-fry size.

Everyone can eat this dish one way or another!

Easy Beef and Vegetable Noodles

Ingredients
  • 440g packet thin hokkien noodles (I got mine from IGA Supermarket)
  • 2 tablespoons olive oil
  • 500g lean beef mince (you can also use lamb, chicken or turkey mince)
  • 1 teaspoon curry powder (add more if your family likes their heat and spice)
  • ½ teaspoon powdered ginger
  • 1 heaped teaspoon powdered chicken stock
  • ⅓ cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar (found at all good supermarkets)
  • 2 tablespoons brown sugar
  • ½ brown onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup cauliflower, cut into mini florets
  • 1 cup broccoli, cut into mini florets (perfect size for little fuss pots)
  • 1 zucchini, diced
  • 2 garlic cloves, crushed
  • ½ cup corn kernels (a 125g can, drained will do the trick)
  • 1 green onion, finely sliced, to serve (the kidlets don't do the green onions)
Instructions
  1. Prepare Noodles according to packet directions and set aside. (I then cut mine up a little more with kitchen scissors)
  2. Heat a large frying pan or wok over high heat. Add 1 tablespoon oil, add mince and cook, breaking it up as you go until browned (about 8 minutes). Add curry powder and powdered ginger mix through to combine, fry a further minute.
  3. Transfer mince to a bowl, set aside.
  4. Add remaining oil to frying pan. Add onion, carrot, celery and cauliflower, fry for 3-4 minutes or until tender.
  5. Add broccoli and zucchini, fry for another 2 minutes. Add garlic stir and fry for 1 minute.
  6. Return mince to pan with corn, powdered stock, water, soy sauce, vinegar and sugar. Cook stirring until combined. Add noodles and stir through mince to combine.
  7. Garnish with sliced green onions if desired.
  8. Enjoy!

  2. Yum! That’s a winner dinner, for sure, although I’d have to skip the celery and broccoli, because no matter how small I chopped it, it would show up on the big fusspot’s veggie radar! I want to get a spiraliser soon, I bet this would taste ace with zoodles too!

  3. This looks right up my family’s alley, lovely lady. You know just the right type of meals to suggest. I’m sure my three year old will whinge about it to know end, but when she actually tries it, she’ll like it. I’ll let you know how I go. Enjoy the holidays xx
