Life has been quite hectic around here this week, I think it’s just one of those weeks, as in there’s been a little something extra happening each day.
Here’s a little rundown:
Monday: Was a lovely day I got to meet and have morning tea with the gorgeous Lauren from Create Bake Make (you really should pop over to her Blog and say hi), we met at Robina Town Centre (one of my favourite shopping centres) and I may have started a little bit of Christmas shopping as well as a little bit of me shopping (I couldn’t tell you the last time I went child-free shopping!) it was just lovely and finally meeting Lauren face to face was such a pleasure, hoping we can do it again soon.
Tuesday: I made some cupcakes to donate to the local Mount Warning Am Rotary Club, they did a cupcake drive raising funds for the ‘End Polio Now’ campaign. I was also minus one Zadada for the night, I gave him a hall pass! Hahaha not quite but he and his little sister went to watch 2 bands he loves, (bands were The Super Jesus and The Tea Party, not exactly my cup of tea). Was nice for him to have a night out, he really doesn’t do it very often, but I definitely missed my extra set of helpful hands.
Wednesday: Was an early start dropping off kidlets, cupcakes, working at the optometrist and in the evening we had a very welcome guest join us for dinner and a catch up, my gorgeous SIL.
Thursday (yesterday): One 9 year old woke and informed me he needed a knight’s costume for Scouts, I’m talking a whole 8 hours notice, got to love a challenge…… 1 old tea shirt, some cardboard, a belt, scissors and staples and we kind of had a costume. I also baked some biscuits for the preschool disco, I made a batch of my Mars Bar & Pretzel Cookies and Biscuits on sticks with m&m’s. Oh I almost forgot, for anyone who has been following my Herman the German (the friendship sour dough cake) Journey, Herman finally got baked and he’s just delicious, I’m planning to share a photo of him on social Media later today!
Friday: Here we are, another busy day ahead with school drop off, work for Zadada and I then tonight the preschool family disco!
And that ladies and gentleman were the stand out events for the working week contributing to our normal day to day craziness!
The good news is everyone’s healthy and happy!
So with all that almost behind us and the weekend one sleep away I thought I’d share my favourite hotcake recipe with you. I discovered it recently on the side of the Liddells Lactose free milk carton and have adapted it to suit the whole family. The official recipe is for Blueberry and Apple Hotcakes which Zadada and I really enjoy but the kidlets being the
fussy unique eaters that they are prefer theirs plain so I’ve shared the 3 different flavour combinations we’ve tested out of late!
Zadada is the chief pancake maker of the household (I’ll have to post him in action soon!), I never seem to be able to get pancakes right, I think hotcakes are more my thing plus I love the fact that Zadada has taken ownership of chief pancake maker.
Whether its hotcakes or pancakes one usually makes an appearance in The Zamamabakes Kitchen each weekend!
This weekend I think it will be Hotcakes!
Here’s your Hotcake how-to:
The Kidlets choice, top your hotcake with Nutella, Golden or Maple Syrup, easy!
Here you’ve got the Adults choice, Blueberry and Apple Hotcakes, delicious make sure you drizzle maple syrup over the top!
And for an American twist why not try a bacon and maple syrup combo, strawberries are optional. I love the salty sweet flavours!
3 options just waiting to be created by you……..
- 2 cups self-raising flour, sifted
- 1 heaped teaspoon Cream of Tarter, sifted (makes for a CAKIER hotcake, I know that's not a word but I like it)
- 2 tablespoons caster sugar
- 2 eggs
- 2 cups milk
- ¼ cup fresh or frozen blueberries
- ½ Granny Smith, cored and finely chopped (I use whatever's in the crisper, pink lady's & Gala's work too)
- Combine flour, cream of tarter and sugar in a large bowl.
- Whisk eggs and milk together in a separate jug/bowl and then whisk through your flour mixture.
- If you own little fusspots who just want plain hotcakes, pour half the hotcake batter into another bowl.
- To one bowl of mixture fold through the blueberries and apple.
- Rest both mixtures for 5 minutes.
- Heat a non-stick frying pan to a moderate temperature and melt a little butter. Pour in ¼ cup measures of batter. Cook 2-3 minutes until bubbles appear on the surface, flip and cook until golden and fluffy.
- Of course the little fusspots get their hotcakes first, that way Zadada and I have half a chance of enjoying ours later.
- Top hotcakes with anything that takes your fancy, Zadada and I like a good drizzle of maple syrup over the fruit ones, Greek yoghurt and honey would work well too.
- If you're feeling adventurous in an American kind of way try some cooked bacon with a good drizzle of maple syrup.
- And if you're a 3 year old that just likes plain hotcakes, eat them as they are!
