I’ve got an amazing little treasure to share with you all today……I tell you this is the Best Ever Homemade Carrot Cake I’ve ever made and eaten, and I’ve tested out a few!

This cake will have anyone you make it for begging for the recipe. It’s moist, it’s delicious, it’s pretty and it’s very easy to make!

Three simple and very attractive ingredients; pineapple, cream cheese and white chocolate send this cake to the next level…….. Is your mouth watering yet?

3 1/2 years ago while staying in hospital after the birth of one little Alani, my gorgeous friend Jennifer generously gifted and delivered me a piece of this mouth watering carrot cake she had freshly baked. I tell you when I took the first mouthful I seriously thought I had died and gone to heaven, it was amazing! For those of you who have had a newborn and breastfed you’ll be completely understanding where my thoughts of heaven were coming from, I love good homemade food anytime (who doesn’t) but when you’re sleep deprived, literally drained with a new little person in your life, good homemade food is sooooooo much MORE than just amazing & comforting! This cake well and truly hit that mark!!!

I guess it’s no surprise to you that 3 1 /2 years later I’m still enjoying this cake recipe( Jennifer sorted me with a copy) just as much as the day I first tried it in hospital. I may no longer be as sleep deprived or physically drained but I can honestly say that this cake still makes my mouth water just thinking about it, let alone eating it! It’s a definite keeper, high on the list as being one of my most favourite cakes to bake. I can see it becoming one of those treasured recipes that gets handed down through generations just like my Nanna Mac’s Moist Chocolate Cake.

Bottom line….. YOU MUST TRY THIS CAKE!!!!

Best Ever Homemade Carrot Cake

Ingredients
  • CAKE
  • 3 eggs
  • ½ cup vegetable oil
  • 1¼ cups caster sugar
  • 2¼ cups self-raising flour, sifted
  • ½ teaspoon bicarbonate soda,sifted
  • 2 teaspoons cinnamon, sifted
  • pinch salt
  • 440g tin crushed pineapple, drained (if you don't like course pieces of fruit in cake just blend pineapple down in food processor to a smooth puree)
  • 2 medium carrots (approx 2½ cups)
  • 1 cup chopped pecans (you can use walnuts)
  • ICING
  • 250g cream cheese
  • ½ icing sugar, sifted
  • 100g white chocolate melted and cooled (I use microwave, beak chocolate up into pieces, place into a microwave safe dish and cook on high at 20 second intervals stirring in between until completely melted)
  • Extra 100g white chocolate for garnishing
Instructions
  1. CAKE
  2. Preheat oven to 190C (I do 175C fan forced)
  3. Grease a slice pan approx. 17cm x 24cm x 3cm and line with baking paper.
  4. Using an electric mixer beat eggs, oil, and sugar until pale.
  5. With a wooden spoon fold through dry ingredients.
  6. Add carrot, pineapple and pecans and stir until well combined.
  7. Pour into prepared tin.
  8. Bake for 35-40mins or until just cooked through and golden.
  9. Cool in pan 5 mins before turning onto cake rack.
  10. ICING
  11. Beat cream cheese with icing sugar until well combined and smooth.
  12. Fold through melted, white chocolate.
  13. Spread over cooled cake.
  14. Finish off with white chocolate curls (Your handy vegetable peeler will easily create the curls).
  15. Keep in fridge in airtight container for up to 4 days (If it lasts that long!!!).

      Thank you. It’s just delightful even our 3 year old told me it’s the best cakes she’s ever had, from her point of view I think it’s the icing that really wins her over. :)
