6 Nights Worth of Dinner Inspiration

Zadada and I celebrated 10 years of Wedded Bliss on Thursday and by ‘Wedded Bliss’ I mean for the best part of the time when I’m not doing things like relocating his uggboots or having a Crazy Mummy/Wife meltdown. As they say ‘through good times and bad’.

Speaking of the good times Zadada and I are sneaking away for a belated little anniversary treat night, just the 2 of us. The kids have all been farmed out for the night to babysitters (very grateful for our extended family) and we are about to head off.

I didn’t want to leave you empty handed for the weekend so I thought I’d put together this little collection of meals for a bit of dinner inspiration. I hope you find something you fansy!

First up we have;

Haloumi Stuffed Chicken Breast this is one of my favourites when I’m wanting something that looks a bit fancy without having all your time consumed. It’s a great prep in advance dish, perfect for entertaining or just enjoying as a family! You’ll fine the recipe HERE.

What about a handy fish dish that is uncomplicated but soooooo tasty. This little treasure of  Coconut Poached Fish is quick and easy to make, I love Thai food and it reminds me a little bit of that. You’ll find the recipe for it HERE.

For some good comfort food that’s sure to win the whole family over take a peek at Aimee’s Easy Cannelloni. The recipe to this little number is HERE.

This next dish is one that will feed a family of 4 or 5 for a couple of nights. If you like risotto this one’s for you. I must make this again soon, the beauty of it is that you can mix and match the add ins to suit your own taste! Oven Baked Risotto with Chicken and Chorizo, you won’t be disappointed with this dish. Now the next two dishes are a little lighter for those of you who may be a little carb conscious or just not feeling like anything too heavy.

Salmon Lentil & Carrot Patties are always a great hit when I make them. I always make sure I have the pantry stocked with at least 2 large tins of pink Salmon and 1 or 2 tins of lentils. Great for those nights when you’re at a bit of a loss but want something on the healthier side. Whip up a batch HERE.

Number 6 on the list is this delicious Thai Beef Salad. It’s very refreshing and satisfying at the same time. Even though it’s a salad I think adding a little extra chilli to the mix keeps it appealing to eat all year round. Give it a whirl HERE.
