Did you notice the speckled base? There are Ferrero Rochers ground up in there taking this cheesecake to chocolate perfection!

Chocolate lovers you are in the right place!

Get excited lovely people, this little treasure only requires 15 minutes to make! The hardest part is waiting for it to firm up in the fridge but hey if you want to enjoy it straight away make the mixture up as per the instructions below and do individual serves in glasses like I did here with my 15 minute Salted Caramel Cheesecakes! (for the record they are amazing too!)

If you’re having one of those sweet/chocolate craving days I guarantee either of these treasures will satisfy every inch of your sweet tooth.

With Easter being less than a month away (though I’ve only just recovered from Christmas) I thought a chocolate dessert like this 15 Minute Ferrero Rocher & Nutella cheesecake would be most appropriate…….. in case you needed an occasion to justify it that is……hehehehe 😉 And if you want to justify making it twice in a short space of time, make it for yourself first, test it out, you know you want to!

To set the record straight this is not your standard run of the mill cheesecake, there’s no gelatine involved (you don’t have to worry about lumps) and there isn’t any baking required (definitely a dessert for the time poor),  but there is mascarpone cheese and it looks like a cake so I call it cheesecake. Bear in mind it’s not quite as firm as a standard cheesecake it will set but is a little more mousse like. If you make the big version like I did cut it right on serving and you’ll be fine.

I can’t wait to break this little treasure out again for our Easter Feaster in a few weeks time.

Ingredients
  • 1 x 250g Packet Arnott's Chocolate Ripple Biscuits
  • 200g pack Ferrero Rocher chocolates (8 pieces for base and 8 for decorating).
  • 100g butter melted
  • 1 cup thickened cream
  • 250g mascarpone cheese
  • 400g Jar Nutella
Instructions
  1. Grease and line base of a 20cm spring form cake tin.
  2. Combine biscuit crumbs, 8 Ferrero Rochers, butter in a food processor and whiz until you have a fine wet crumb mixture.
  3. Press crumbs into the base and ⅔ up the side of spring form tin, pop in fridge.
  4. Whip cream in a bowl with electric mixer until thick and just peaking
  5. Add mascarpone cheese and Nutella to cream, fold through until well combined.
  6. Pour mixture over prepared biscuit base.
  7. Decorate top of cheesecake with remaining 8 Ferrero Rocher chocolates.
  8. Cover with foil and place back in the fridge for at least 6 hours, overnight is better.
  9. Note: As I said above if you want to enjoy this little treasure a whole lot quicker, serve it up in individual glasses, if you're not worried about the firmness you can eat them straight away! (you've got to have options)
  10. For the full cake cut when ready to serve (this will keep your slices looking pretty). Enjoy with a scoop of vanilla ice cream.
  11. Cheesecake/s will keep in the fridge for up to 4 days.

I swear since having Blake (our first) almost 10 years ago there’s some invisible little fairy in my life that fast forwards time like there’s no tomorrow! (tell me this is normal)

I’m mixing things up a bit today…..I’ve decided it’s time to make this place a little more homely and by that I mean sharing a bit of what’s been real in my week. I envisage Zamamabakes as an online morning tea or even a BBQ catch up (sometimes you need more than a cup of tea and more like a serve of bubbles or vodka with your yummy edible treasure).

I’d love for you to join in the realness so feel free to share right back at me lovelies. For now I’m calling it……

A piece of REAL

Here’s the real so far this week….

Barbie broken neck

*Playing nurse to decapitated Barbie dolls (sticky tape works wonders).

*Dealing with snot. Two unwell little girls, waking through the night, leading to a double GP consult, which in turn lead to a threenager meltdown because I wouldn’t blow up the balloon the GP gifted for being a good patient (yes I’m a germaphobe and I wasn’t putting that freshly slobbered over balloon anywhere near my lips!!!!!) I even offered to purchase a full packet of balloons (a great offer I thought), we were past the point of reasoning and explanations. A big firm bear hug got us back on track. I secretly bought a packet of balloons knowing my offer would not be forgotten.

*Having a lovely service operator at our local supermarket remove me from a line of 6 trolleys deep, express me (and my not so well girls) through her checkout, efficiently packing all my groceries, letting me know where my soft, heavy and breakable goods were (I love good service). Her name was GLORIA! Gloria I hope to be served by you again soon. (thanks to all my FB readers who helped me work out that Gloria’s name was Gloria)

*Smelling Zapuppydog’s dead animal scent!  (I don’t think you want to know what he rolled in, do you?)

*I’m excited knowing Valley Eyewear has just arrived at the Optometrist I work at part-time, can’t wait to try a pair on! (it’s the little things sometimes)

*Allocating our 9-year-old grown up jobs he can do independently with a small reward has turned him into what I would call a responsible, helpful young man (he seems happier, giving us much less attitude and life seems easier!) who would have thought?

*Then there’s all the groundhog day chores (boring, mundane but necessary to maintain moderate smooth sailing at Zamamabakes HQ), baking, blogging, talking to you guys and a few random beverages are my outlets 😉

*Speaking of baking, there’s been lots of chocolate in my kitchen this week!
